Temptation: Gina’s Simple Lemon Bars


I was watching the food network today as usual. I was watching the “Down Home with the Neely’s” show and Gina made these exteremly tempting Lemon bars. I think I am going to attempt this recipe and see how it comes out. If you know anything about me, I L-O-V-E lemons and limes! I like to put a dash of it here, there and everywhere. From sweets to savory dishes, it just adds a nice hint of tang. Plus, I love the smell of them. It’s just such a clean, crisp smell that awakens your senses. So the thought of Simple Lemon Bars is very tempting.Once I get a chance to make it after getting more flour and sugar, I will post my thoughts and pics here! If you try it before me or made something similar, let me know.

Here is the recipe:

Gina’s Simple Lemon Bars


  • 1/2 cup cold butter, diced
  • 1 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1 cold egg yolk
  • 1 dash salt
  • 1/8 cup ice cold water

Lemon Filling:

  • 1 1/4 cups sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon baking powder
  • 1 lemon, zested
  • 3 lemons, juiced
  • 4 medium eggs

Lemon Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1 1/2 cups confectioners’ sugar
  • 1 teaspoon lemon extract



Preheat oven to 325 degrees F.

Dice the butter and put into a food processor with the flour, and sugar. Pulse in short intervals until the mixture is crumbly and resembles coarse bread crumbs. Add the cold egg yolk, salt and water to the mixture, this will make a pastry dough. Place the dough onto a floured surface and form into a ball. Wrap in plastic and place in the refrigerator until cold.

*Cook’s Note: If you don’t have a food processor you can use a pastry cutter, a fork or your hands. If using your hands be careful not to over mix or allow your hands to warm the butter.

When the dough is cold, place on a floured surface and roll out to cover the bottom of a 13 by 9-inch pan. Bake for 20 minutes.

Lemon Filling:

Whisk eggs together and set aside.

In a separate bowl mix the sugar, flour and baking powder together. Add the lemon zest and juice. Mix in the eggs until well combined. Pour the mixture over the par baked crust.

Place in the oven and bake for 30 minutes until the center has set firmly. Remove from the oven and allow it to cool. Cut into bars.

Lemon Cream Cheese Frosting:

In a large bowl, mix all ingredients together and blend with a hand mixer on low until creamy. Pipe frosting onto lemon bars.
